This plum cake is special in tom’s because the plums are soaked in a mix of Old Monk rum, red wine, and sugar syrup for six months after Christmas. During this time, the cake becomes darker, more moist, and develops a rich, subtle taste from the blend of black raisins, nuts, and tutti frutti.
